Jalapeno Cheddar Cornbread

  • Ingredients:
  • 2 large eggs, whisked
  • ¼ cup vegetable oil
  • 1 cup buttermilk
  • 1 cup cornmeal
  • ½ cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • 1½ cups sharp cheddar cheese, shredded
  • 1 cup corn kernels @goodefoodsfamily 
  • ½ onion, diced
  • 2 medium jalapeno peppers, seeded and diced

For green beans: 

  • 1 can Green bean @goodefoodsfamily drained, rinsed, and patted dry
  • Little Salt
  • 1/2 teaspoon Black pepper 
  • 1/2 teaspoon Garlic powder

instructions

Preheat the oven to 350 degrees F and then in a medium bowl to combine the eggs, oil, buttermilk and cornmeal.

In a separate bowl combine flour, baking powder, baking soda, salt and garlic powder. Whisk together until combined.

Pour the egg mixture into the flour mixture and mix until we combined.

Fold in cheese, corn, onion and jalapenos.

5.

Pour the batter into 8 in baking pan. Bake 45-50 minutes until golden brown then let the cornbread cool for about 20 minutes.

6. Green Beans

Add salt, black pepper, garlic powder and saute until slightly crunchy.
